Tucked away in Shaw’s historic Blagden Alley, Tiger Fork offers playful, modern takes on Hong Kong street food, traditional dim sum, and classic Chinese dishes with global influence.

 
 
One of Shaw’s newest and best is Tiger Fork, a temple of Hong Kong cuisine situated in an alleyway. The eclectically red-and-bamboo Chinese interior is smile-eliciting, much like its menu.

Tiger Fork feels secreted away...arrive and discover a sultry Hong Kong-style den. Inside, find brick walls emblazoned with dragons and mountains, Chinese basket-style lanterns, and warehouse floors that show off a sexy, hip look. Then get to sipping on one of their many glorious potions, such as the Bird Market, a chartreuse blended with elderflower, bai zhu and bergamot. Glossy, thick pork ribs are brushed with a soy and ginger sauce for umami glory.

A color-saturated Shaw dining room is the backdrop for a young crowd that tends to dine late. They come for whimsical cocktails (some spiked with medicinal Chinese herbs), Hong Kong–style street food, and a party-that-never-stops vibe.

The fried rice with pearly shrimp, chunks of white fish, sweet omelet and a dusting of minced fried garlic is sensational, worth haggling over who gets any leftovers. Every table seems to have a plate of cheung fun on it, and here’s why: Steamed rice noodles rising from a chile-fired sauce of black beans and sesame seeds are awesome. But the one dish I never fail to get is the barbecue plate — crisp-fatty pork belly, sweet-edged pork shoulder, succulent soya chicken — dropped off with condiments (green hot sauce, pickled vegetables, sweet scallion sauce) every bit as wonderful as what they kiss.
